The winter food season has begun, how do you make your pickled veggies

I like my turshiya with a sweet touch to it (honey is the best option, sugar is whatever).
How do your grandparents make it? What veggies and ingredients?

It’s kinda late in the season but I looooove my family recipe for pickled tomatoes. All the ones I try at the store or at restaurants are too sweet for my tastes.
