Lost Odyssey. Until expedition 33 (which if you’re in this community, it hits right every we are age wise) it was the most intense story I’d ever played in a game

Whatever grand theft auto was around. 4? 5?

Skyrim, my favorite game of all time. Then Mass Effect 2, possibly my second favorite game of all time.
Overall, the PS3 generation had FAR more really good games per year than any other generation to this point. Combine that with the massive leaps in graphics, character control, and just the massive amount of stuff that games were then able to do that they had never done before, and its hugely important. I consider it to be the dividing line between the "old world" of games and the current one.
Along with those I mentioned, we have a whole bunch of Assassins Creed games, the Uncharted series, Dragon Age Origins and 2, The Little Big Planet series, the best Gran Turismo games, and a whole lot of great Lego games. Plus numerous one offs.

I had a 360, but I feel like this was when 3D games finally started to look and feel good. PS1/PS2/N64/Xbox/Dreamcast all had some great games, but there was almost always a level of jankiness to games in 3D.
The Mass Effect games, Skyrim, God of War, and others from the 7th gen are among my favorite of all time.

Was fully PC at this point, but S.T.A.L.K.E.R. Shadow of Chernobyl was by far the most memorable for me. It had plenty of jank and issues, but so did the Bethesda games. But the atmosphere and emergent gameplay and overall story and setting was mind blowing.

Wii Sports was fun. And Guitar Hero 3.
Not sure I've ever played a PS3 or Xbox 360.

Morrowind a whole lot when I was younger. Recently played Oblivion into the ground for a few months. Life wasn't going so well at the time, but that actually helped. Blackops zombies was a favorite for a while. I remember when it was just the one zombie map, no perks. That one freaked me out

7th gen is when I got back into gaming after a long time away. Red Dead Redemption, Assassins Creed (2, Brotherhood, Black Flag), Demons/Dark Souls are still some of my all-time gaming experiences.

Lost Odyssey or Resistance 3. R3 was such a breath of fresh air with its weapon ulgrades and letting you hold multiple weapons. LO was like the turn based Final Fantasy games of yore. Great story as well.
