I love fries. Love them! I need chicken to be in a rice bowl or on a sub, very well sauced. And Yorkshire Pudding's OK. My mother loves those. I don't.
Does she like to dress the fries with anything or keep them plain?

With fussy eaters I always wonder, if things weren't to your liking and you abstained until tomorrow or the next meal, wouldn't you become more accepting or would you keep on rejecting it indefinitely?

You would eventually eat it. No one chooses starvation over a texture you don't like. People will disagree with me but if you haven't eaten for 4-5 days you'll eat anything. Starving people eat dirt, boot leather, books...

This may be true for people who are simply picky, but rarely does someone go for so long "just" as someone who is picky. Autism is a neurodevelopmental disorder and influences behavior in ways which override many of the body's instincts such as what you're describing. It interferes with people's interoception, which is the brain-body signalling process that tells you you're thirsty, hungry, you should move around, etc.
ARFID (the typical autistic eating issue which I suspect might be going on with OP's kid) is not simply pickiness, but a distressing aversion which can make it nigh impossible to swallow "unsafe" foods if you're not actively working through the disorder with a therapist. People with these kinds of sensory issues experience panic attacks and terror induced by textures, scents, etc. Depending on severity it can be a choking hazard. It is certainly something that can be worked on but it needs to be done very carefully.

Eating disorders are the deadliest mental illness, second only to opioid addiction. Over 10000 people a year die in the US alone from starvation caused by mental illness. You should try doing just a tiny bit of searching before saying what you think

Fuck, I almost starved to death five years ago, without being autistic. Just had a bad intestinal infection that turned into a year-long medical battle and left me with ptsd.
After that, I could barely eat anything without wanting to puke, well after I had recovered. I got skeletal until I got things under control with therapy and meds. Untreated, I would have just fucking withered and died

What I'm really getting at is that the mind is incredibly powerful. Depending on the mental illness, your mind can basically turn on you and start lying all the time. It's fucked up and honestly it's unbelievable if you haven't been through it yourself. That's why people get worked up about it though

I'm aware, I've plenty of second-hand experience with Depression and Anxiety via loved ones. I've probably got undiagnosed ADHD, and I've had a severe concussion. Also spent a lot of time around a severely autistic family friend.
Anyways, OP wasn't even talking about mental illness, they just said a fussy person.

The DSM 5 definition cites malnutrition and significant weight loss as core traits of ARFID. That counts as starvation, to me.

From experience i try to just swallow it without touching with the tongue, and not think of what im eating. It triggers uncontrollable gag reflex otherwise

Chicken breast slow cooked in gravy , remove from gravy and shredded, aunt Bessie's brand Yorkshire puddings , triple cooked chips . Ketchup on side in separate tub . Only enough gravy to stop chicken being dry . Served on a plate with separate sections

It's possible, everyone has different tastes and textures that they like / don't like . As a toddler she had a phase of only eating peas but now won't touch them
