Meatloaf never looks nice unless you put it in a loaf pan, in which case you hardly get any glaze and it swims in fat. This is probably delicious

I used a pan purpose built for meatloaf, that has a perforated insert that allows the fat to drain below the insert. The last several I've done were free form on a cookie sheet.

Yes, they've had them since the 70s. With them, one can run a knife down along both sides and lift the whole loaf out by the insert.

Oh that's smart. I don't make enough meatloaf for that to be worth it but I respect it. I used to do the Alton Brown trick where you form it in a pan and then just pop it out upside down, then I realized that it flattens as it cooks anyway so you might as well just roughly shape it since it's not gonna come out perfectly loafed either way.
I think I'd make meatloaf more if I was doing smaller portions. I tend to do a 2 and a half pound loaf and I can only get it mixed properly with my hands, and it's gross and the cleanup is terrible. If I could do it with a spatula I would do it more, since I love meatloaf.

Just get a pack of latex gloves and use one to mix the meat… throw away when done. This is my solution to no mess meatloaf mixing.

I do that with a lot of things, mainly meat or a whole Salmon side, just to be a little more sanitary, but also so I don't get all grossed when squishing Alien Brains, I mean, ground beef 😉

Meatloaf babies are what I make. I guess it's just a large loaf shaped meatball, but Meatloaf baby sounds more fun. This way, everyone gets a good glazed crust, and the leftovers freeze super well.

This might be what I'll start doing to be honest. I tend to make a ton of food and freeze it, but making a couple smaller ones might be a better idea. More crust too like you said.

So this might sound crazy, but back in my shithead drug addict days when I was in jail, the best meal they had, we called "meat wad". It was basically this, served with corn and mashed potatoes lol. Thanks for the memories 😭

That was the other thing that bugged me. I can't get the first slice out neatly, with a spatula. So if I upturn the pan and bang it on the cutting board, sometimes it crumbles. There needs to be a pan like a Springform on one side, so one can get a spatula under the loaf. 😁

No you can absolutely shape it into a tall, thin 'loaf' and roast it in a big pan to mitigate the fat saturation. I've done it many times.

I make mine with several layers of glaze throughout the cooking so I can't really see a need for gravy with it, but maybe it's worth making for meal prep for something else the next day. I do mine with carrot and onion, which you'd generally throw in to flavour gravy anyway...

Yeah this was next level. Used cherry cola dry rub, cooked it in the smoker, and basted it with a sauce made with that same dry rub as a base.

Oh man, that sounds so good. Yeah I work a really stressful job and don't have much in me to do super extra stuff, let alone in a tiny apartment. But I am slightly envious, especially of the smoker. I just saw a recipe for a smoked meatloaf the other day that looked awesome.

My favorite recipe was from 72 Market Street, a Venice, CA restaurant that the Actor Dudley Moore was a partner in. It had a sautéed veggie mix, of minced onion and bell pepper that it was stuffed with. The pleasantly surprising seasoning was Nutmeg. I did it in a pan once and it was way too moist and crumbled, but was delicious.
