For those of you who like corn beef hash. I understand we are a dying breed and a lot of folks dont care for it, no one needs to tell me they hate it. I see you, youre opinion is valid, I dont need the hate here.
The question:
How do you like your corn beef hash? My girlfriend and I are both on the same page and we cook the absolute shit out of it. By the time its done its about half the volume of the can it was filling.

Have you tried reindeer hash yet? When I was staying with family in Finland I had reindeer potato and onion hash, it was REALLY good but not as fatty as we like hash. Good chunks and flavor though. I added in some bacon fat and it was amazing

I’ll have to see if I can find it. Sounds amazing. They sell “pyttipanna” or oxpytt which is similar but usually frozen. It’s beef, potatoes, and onions. Not much fat. And not as flavourful as corn beef hash. I don’t remember what the can of stuff I bought the other day is, but it sure looks like hash and includes some extra fat. I’ll have to try it soon.

Im interested to knowthe canned! I'll ask my mum what the reindeer hash was called, I do remember adding strips of back fat to it to help the crisp. Definitely something to eat on a day you know a toilet is near but so delicious.

Ingredients: Water, barley oats, beef tallow, venison, beef and pork meat, beef heart, beef liver, pig connective tissue, pig fat, onion, beef kidney, sage, potato fiber, sugar, maltodextrin, yeast extract, herbs, spices (including celery), spice extract.
Good thing is that it’s good until 2028 so I have time to work up my courage.

I can't tell you how many times I've had it in a Deli and it sucked a$$. That's NOT how one does CBH! You don't just cleaver up some corned beef, and toss some potatoes in it! Canned is the only way, whether it be Hormel, or whatever they use in coffee shops, which is my absolute favorite. Sysco, or whatever. 🥰

Do you have a food processor or meat grinder? If you could grind the meat or chop it finer, you might get a result closer to the canned stuff.
There is probably also more fat in the canned stuff compared to what you make.

the canned stuff is great, i love it. but in Hawaii we make it from scratch with panko and egg and sometimes a lil onion or worcestershire, then form into thick patties and fry those. it's amazing in a different way, not as salty and kind of earthy and soothing. the portability of a patty is also great, i used to grab them out the fridge in the middle of the night and eat them cold standing right there. it's like the cold pizza effect, hits even better somehow.

I, too, get it crispy on my griddle but I also add butter & grated onion to take it up a notch and reduce the saltiness. Sometimes I use a flat grill press on it and flip with a whopper-flopper spatula but only if I’m feeling like a diner cook that morning.
On really special days I’ll also toss a couple poached eggs on top with plenty of cracked pepper.

Ok so everyone is talking about what they like WITH their cornbread hash. Personally, I make mine crispy to the point where its crunchy throughout. Then rye toast 2 over easy eggs. I pop the eggs over the corn beef and mix it. Egg on toast then corn beef hash mustard and Tabasco(it has to be Tabasco no other hot sauce work right) and yellow mustard. Take a big bite then wash it down with drip/French press coffee with sugar and milk. I live for the flavor combo left after all that. Its my favorite breakfast.

My grandpa was a cook in the Army in WWII and I was amazed to learn that because in the 25 years I knew him, corned beef hash in a cast iron skillet is all I ever saw him cook. I think of him every time I cook the absolute hell out of a big can of this stuff.

I've been on a canned corned beef hash kick lately and I prepare it the same way.
Pan fry that can down to crispy (which means it reduces to about 1/2 the size), 4 Sunnyside up eggs and 3 prices of toast. It makes for a big and satisfying meal. Not great for the cholesterol, but that's what statins are for.

It taste like salty crispy potatoes and peppered beef. The corn in corn beef is pepper corn the potatoes make it hash. I've made it from scratch but nothing beats the irradiated goop that flops out of the can. It looks like cat food it but tastes like "everything's going to be ok" from a motherly voice.

There used to be an instruction maybe from Libby's (I'm in Canada) to make hash patties.
You'd refrigerate the can overnight so the contents congeal. Open both ends of the can. Slide out the cylinder of hash and slice it into rounds.
Fry the patties on both sides. 🤘

It needs more oil than you'd expect. Its like half salt plus the potato soaks up a lot of fat. Butter will burn long before it crisps. High smoke point oil. I use pam pan spray.

I make a scramble. Heat the hash for a while to reduce the moisture a bit. Add scrambled eggs. Once the eggs set, top with shredded cheddar. Put the pan under the broiler to melt the cheese.

The trick is to cook it into a patty. Then flip it without stirring. Crispy sheets on the outside, slightly moist on the inside. Lots of ketchup, hot sauce and eggs over easy with lots of lace.
