i’m a really big fan of this car and I want to get a little daily. I can learn manual better on and was curious if this would be a decent choice and was wondering how difficult it would be to fix that third gear issue

I have the same car. That 5 speed is known for having issues like that. Going to turn into a ticking time bomb eventually. But, mine grinds 5th only when going from 3rd.
Overall, the car is fairly low maintenance. Things to check.
Lateral Links, about a foot long 8 shaped (kinda) with two bushings. Those rubber bushings go bad a lot. They go side to side connected to the rear Trailing arm.
Trailing arm bushing at the front. Same they wear out with high mileage.
MOTOR MOUNTS. Check the motor mounts. Immediately. After I got mine, the Tri-mount holding up the transmission side was missing a bolt and snapped in 2 places. Dropped my motor at a 45 degree angle while driving. Replace all of them and think about upgrading the rear if you don't want a bunch of slop and bucking while shifting.

It's a fine car. Do you know how to replace and/or repair transmissions? If not, I'd guess it'd be VERY difficult to repair that third gear issue.

The most likely issue is that the 3rd gear synchro is on its way out. Sometimes, you can put some sort of trans fluid cocktail into it that will make it happier for a bit, but it's still worn. The fix is to replace the synchro. That involves disassembling the transmission. If you don't know what that entails, then I would just tell you it's on par with the complexity of rebuilding the engine. The other fix would be to replace the transmission with a good used one. That's what any shop is going to do, and it is way less labor intensive. That job is pretty straightforward, but it's a lot of work.

I'd change the gear oil to redline mt90 first that might help.
