Help with Christmas pudding recipe?

I'm from Sweden, i have in the past made a Christmas pudding just to try it, but i was the only one in my family that really liked it, so i wondered if anyone of you knew a good small batch recipe (single person household)?

I see you've already been given a choice of good quality recipes so that's a good start. I wanted to mention the beef suet which gives a wonderful flavour but you might find it difficult or impossible to get in Sweden unless you have a friendly butcher so you could use unsalted butter or perhaps ghee as an alternative although I prefer suet if possible. The other thing I wanted to say is that you could make 3 or 4 small puddings from a family recipe as they will keep for several years and actually have a better flavour after two or three years storage. Many households who made their own Christmas puddings in the past made a large enough batch every 5 years or so as it is quite a labour of love. Finally if you like the dark rich flavour of traditional puddings I wouldn't experiment with light brown sugars as I think you may be disappointed with the lighter style pudding. Have fun!

Luckily one of the stores i usually go to have suet. How do you suggest i store it if i make a large batch?

That's a lucky find with a shop that sells suet nearby.
All traditional recipes assumed you would make the puddings a few weeks in advance of Christmas and explain clearly how to cover the pudding basin with wax paper and sometimes foil to prevent water getting in during the first steaming. They then suggested you kept the cool pudding - still tightly wrapped and protected in a larder or food pantry (as cool, dark ventilated place protected from insects) for several weeks until Christmas day when it was re-steamed for several hours before serving. The spare puddings are simply kept in the pantry for longer until they are steamed and revived in exactly the same way (make sure they are very well wrapped. You could also google the tradition or ask Chat GT etc. I hope that helps.

Never made individual size xmas puds but if I did then this would be my first choice But you'll need to source some mincemeat. I use Delia Smith's traditional Christmas pudding recipe every year. Instead of one big pudding bowl why not split the mixture into four smaller ones? The puddings will keep for a long time once steamed (I found one in my cupboard that was at least two years old and tasted fine!) so you could enjoy them throughout the year, not just at Christmas!

This one is a bit lighter than a traditional Christmas pudding but I prefer it. I think it might be the use of light brown sugar rather than dark brown sugar that does it. I would recommend using unsalted butter instead of suet though. The recipe makes two puddings, so half it or give one away.

I've always found this recipe nice and straight forward - it does make a family sized pudding, but I have used it to make a small one just for my husband and I by dividing all the quantities by 3 and adjusting the cooking times a bit.
