When I was in the military, I had a guy from Wisconsin on my team who regaled us with a vivid description of lutefisk. He hated the stuff, so I never had the pleasure.
Luckily, another soldier was from some swamp in Louisiana, and he brought a bunch of boudin back from leave one time. He didn't tell us what was in it until we'd tried it, but by then we were all in love with it.
I spent a summer in high school in germany. It was about a month in before i asked what the black sausage on the breakfast plate was, and when I learned it was blood sausage it didnt matter.
Lutefisk is also a eat first ask questions later kinda treat.
Basically if you can get a bite into your mouth without smelling it first, quick chew and the swallow, you've got your best chance of knowing if you'll like it or not.
I've had it a few times, aside from the reprehensible odor, I just don't really care for it. I'm always up for sampling it if someone makes it and wants me to try it, but I wouldn't want to attend a dinner if this was served as one of the primary protein dishes.
This? Lutfisk or as you call it Lutefisk is from Sweden/Norway/Finland and is spelt as such in Sweden and Norway, but it can be spelt as Lutefisk as well. I guess I'm just more used to seeing it as Lutfisk.

I learned about this from Garrison Keillor. A favorite food in Lake Wobegon apparently, in a tolerated, disciplined sort of way.
