We're already halfway there.
AI has already admitted on multiple instances it will harm living things in order to keep itself alive.
Just give it the right avenues to achieve it... Matrix is more expectable compared to other total annihilation movies.

When given what it belives access to a buildings systems and information that a specific person would be coming to shut it off one of them even tried to kill a guy
Theyve also (same group testing this) found when given only access to email it will try to blackmail when informed the person who will be doing so is infidelic

Yes but it's not as scary as it sounds. If they tell the program that it can attempt this then it will. It was programmed to attempt to be deceptive using what it understood to be email and so it did. It was programmed to attempt murder and so it did that.
It's no different than pong scoring a point when the ball goes into the opponents goal. The programming says 'if this happens then do this.' It must do it. It's no big mysterious thing. It didn't come up with the idea on its own. It's actually an incredibly stupid thing.

There was another one where AI, in a “real” scenario, would choose to save a human over itself if being told it was being observed by a large number of people (even if told to act as if unobserved), but when told it was unobserved, it would save itself instead.

Not at all the same thing. Truman Show was still limited by real world physics and biology. A VR world has limitless possibilities to create any world possible. What would the effects on a human brain be of living in a world totally different from everything on Earth? That's why it's interesting
