I plan to visit Six Flags next weekend with the GF for Fright Fest and was wondering what part of Dallas would be best to stay in in terms of walkability, bars, and restaurants.

Proximity to the park is a plus but not necessarily a deal breaker. Im willing to poney up more for an uber if it puts us in a more entertaining part of town. Thanks!

It's about a 25min drive from downtown Dallas to Six Flags without any traffic/wrecks. I'd budget closer to 35min at least.
If you want proximity, consider staying out near Six Flags in Arlington. If you don't mind the drive (and price involved -- you mentioned Ubering) stay in Bishop Arts or Uptown. Both are walkable and have plenty of things to keep you busy while you're here.

Ended up booking an awesome town house in bishop arts. Any recs for food and bars over there? As a Houstonian I want to embrace the Dallas culture as much as possible, despite how much shit we talk about you guys down here hehe. Thanks so much!

Your best options:
Uptown or downtown Dallas proper - uptown is a bit more upscale, not quite as busy. Downtown has a ton of options for your taste and budget. Uptown you could go more upscale boutique at Zaza, there’s a Marriott that’s new, or the Canopy. Victory park is a bit out of the more vibrant areas fwiw.
If you have a bigger budget the Arts District is right between the two and is best of both worlds and an amazing neighborhood (Fairmont likely the most reasonable rates, JW Marriott or Hall Arts Hotel will be more).
Fort Worth is another options for a bit more tourist / entertainment focused and western feel experience at or near the stockyards.
