As an aside: I'm from Missouri. Traditionally Missouri experiences it's first frost in the middle of October. Yesterday it was 84 deg F. Today it's in the high 70's.

The "why" was deliberate, however is was not a conspiracy.
In 2020, IMO2020 AKA SULFER2020 went into effect.
This was a plan done to rid the maritime industry of sulfur additives in ocean going fuel. This was because sulphur was added to the fuel as a detergent to help keep engines clean, as well as a few other minor benefits. The combustion turned the sulfur into sulfur dioxide in the exhaust. This sulfur dioxide then goes up in the atmosphere for about 3 months at most, then comes down as acid rain, thus why it was removed. sulfur was removed (or drastically reduced from previous) from nearly all terrestrial fuel in the 90s and much powerplant fuels earlier (60s-70s ACID RAIN panic), the maritime industry was just following suit as a huge laggard.
This is important as a single ocean frieghter puts out as much exhuast as a average US city worth of cars, and there were/are literally thousands of them crisscrossing the northern hemisphere at any time between US-EU in the atlantic, and US-China in the pacific (and to a lesser extant the rest of the world, but this is why the change was so drastic in the north of the world).
However, while it was up there, the sulfur dioxide was an extremely effective greenhouse gas in that it deflected a lot of the sun's heat. Without it up there, now the ocean is directly being warmed, tipping much of it past what much coral species evolved to survive in the respective geographies. It was extremely quick and drastic as IMO2020 went into effect while everyone was distracted with COVID. Essentially the sulfur was a "shield", a form of geoengineering humanity was unwittingly doing.
Good luck getting humanity to agree to do anything to fix it or minimize fuel consumption, too many rich people from fuel industry are determined to keep it going, and if COVID taught us anything, is that governments worldwide would rather outright sacrifice humans than allow shareholder value to plummet.

You paint a very black and white picture of it so I will clarify:
Global manmade SO2 emissions have dropped by about 10% as a result of the IMO rules. Ironically air pollution caused by burning fossil fuels has a slight cooling effect on the planet, which is the opposite of the warming caused by greenhouse gases. But there’s nothing beneficial about air pollution for the environment or human life. It leads to the premature death of around 8 million people globally each year.
The cooling effect you describe is very real. Naively then it might seem that air pollution is oddly helpful to counteract climate change. But that doesn’t mean we need air pollution to keep the world slightly cooler. As we nowadays emit less particulate pollution, there will be a gradual reduction in air pollution aerosols, which could cause a temporary warming effect. Because these changes will occur gradually over several decades, it’s unlikely to cause much of a temperature rise.
Over the long haul, reducing emissions of heat-trapping gases will more than make up for any temporary warming. Plus, cleaner air will save millions of lives.

Unfortunately as an alternative to removing sulphur from their fuels, they've been allowed to develop systems to scrub the sulphur from the exhaust.
How are they doing that I hear you ask? I bet anyone reading this can guess.

Last winter, we had about 10-15% of the normal amount of snow. We normally get around 35" during the season.
We got around 5".
We do, however, get the occasional cold snap of -30 to -40F, but with no snow on the ground. That shit is extremely hard on the trees and grass as there is nothing there for insulation value of the ground.

But the average winter low in my area has been steadily increasing, to the point where I'm now in a different USDA hardiness zone and can plant things like figs and pomegranates and they survive winter just fine where that wouldn't have been possible even 30 years ago.

The biggest issues from climate will be:
Money and awareness solves most of these issues pretty well. If by some chance the situation changes, you can retire on a retirement; otherwise, you've got a nest egg for buying your escape from the apocalypse.

It's just going to be a long-term depression that swallows up several billions of unfortunate souls who didn't have the wealth/wherewithal/luck to escape it. I finished my bachelor's in spring of 2020. I had my entire post-graduation career lined up and was going to be making great money and then lockdown happened. I've only recently finished recovering from the setback.
I was already on the fence about thinking I was going to live to retirement age just because of climate change, and then the world started ending in 2020. Now my retirement plan is to either die before 65 or hope that the govt (and society as a whole) undergoes an enormous shift into actually caring about people with things like socialized healthcare and elder care.

Some bright news though, even with these tipping points we have mitigated the worst effects later. Yes Florida will still be underwater, Miami and probably Tampa will be gone in about ~50 years. Global climate is no nuanced and interconnected that it’s practically impossible to predict HOW it will all go down. But easy to predict what the end product will be and that’s the end of humanity as we know it.
It will likely resemble those dystopian movies such as the one that Tom hanks was in, with his robot.

We can stop eating cow. They require years of raising, so much water and food during that time. They release a lot of gas during their lives. And for what? A food source? It's incredibly inefficient and damaging to the environment and rain forests that get slashed and burned to make graze land for them. Chicken and tofu are so much better for the environment.

IMO basic economics is going to destroy the large-scale beef/dairy industries here soon. Can't feed or water them reliably enough to be worth it, especially if climate change shifts food prices to the point where growing cattle feed is sub-optimal.

Imagine, if you will, someone builds you a house. This house is awesome. The softest, most finely manicured lawn. Driveway has like 300 year old oak trees framing it. There's a garden out back with the best vegetables grown in the blackest, richest soil. Fruit and nut trees everywhere. Cool hedge maze. Inside the house, the best hardwood floors and in the areas that are carpeted, it's the deepest, plushest stuff possible. Hardwired fiber internet in every room and 100% wifi coverage. The kitchen is huge with stainless steel appliances, lavishly stocked pantry. The multiple bathrooms are huge with marble floors, 18 head showers, tubs that can seat 5. There's an indoor pool out back with hot tubs and both wet & dry saunas.
Now, imagine that the builder hands you the key to this place and says it's yours. No charge. He then fucks off to Bali or something to drink frozen beverages with a bunch of nubile maidens.
He comes back to see that you've done donuts on the lawn with a jacked up pickup. Cut down the driveway trees to make sawdust for a barroom floor. The garden is ripped up and the earth salted. The fruit trees cut down so you can smoke a pig. Hedge maze is burnt down cuz it's ghey. Hardwood floors are busted up from some asshole riding a minibike on 'em. Carpet has pig shit and mud tracked all over it. The wiring in the house is ripped out. The appliances have been sold off to buy beer. The marble stuff is smashed for the lulz. Someone's cow is in the pool. Someone else took a shit in the hot tubs.
He stands there looking at the devastation you've wrought. You stand there with a shit eating grin on your face. Do you honestly think he is then going to invite you to come up and live with him in his even finer house on the hill?

E.g., China has the largest carbon footprint in the world, but when you factor in its per capita rates, it's half of the US per capita footprint. I don't know about those panels, but rooftop solar just depends. Here in Cali it was a good deal a few years ago (when I got mine), but then PG&E changed plans and new solar customers have a worse deal.
So basically you need to get a backup battery with your system. Which is expensive, and I think better solid state batteries are coming soon, which should be cheaper too.
But I also use small scale solar to charge 12v batteries, for camping, trolling motor, and such. Good to have stuff like that around for emergencies.

Well that is kind of the decision im looking at. Do I do just enough to run like the fridge and lights + charge devices...or do I plan to be able to run on solar for a decent portion of the year. I also have a decent amount of land so if the panels them selves arent that expensive I could expand the coverage if I needed beyond the house.
I have small solar now, just a biggish portable anker solar "generator" and a 400w solar panel, plus a smaller backpack one.

Looking at my solar production, I would need a ton of batteries to get through winter. It's not feasible. But I think the solid state batteries might work, when they're available.
Originally I wanted to go off grid, but in reality it's a good thing that I'm feeding extra green energy to the grid.

It's kinda like bamboo clothing compared to plastic polyester clothes. Sounds good on paper, sounds healthier. But the chemicals used to process the bamboo clothing makes it unhealthy to the buyer and makers.
