American cheese is a cheat. You can make cheese sauce with cheddar and a rue, but can separate or become gritty. American cheese is full of chemicals to make it melt smoothly and not separate. Those chemicals are strong enough that you can use it to help other cheeses do the same

It’s sodium citrate. Not that mysterious and about as dangerous as salt. It’s really easy to make processed cheese sauce at home using sodium citrate, water, and your favorite cheeses.

American cheese is the bologna of cheeses. Just a bunch of discarded cheese jumbled together and melted down with a bunch of preservatives. It's gross, and it makes a good cheese sauce if youre serving children who know its cheesy because its yellow.
What you initially described is basically foolproof, melt butter, add flour, whisk for a minute, add milk, heat so it becomes homogeneous, add shredded cheese. It doesnt separate or become gritty unless you have no idea what youre doing lol. Its 1000% times better than american cheese or velveeta and not nearly as heavy

Here is a trick for making cheese sauce for pasta: cook the pasta with only enough water to cover it. The water will be very starchy. Then, when it’s almost done cooking add a can of evaporated milk, butter, salt & pepper, and if you want you can add spices like garlic powder and a pinch of nutmeg. Some people like some mustard powder in there. Bring it back up to lightly bubbling, then add your cheese.

That sounds like it'd be pretty tasty. You'd basically be replacing the flour with the starch from the pasta water. I'd be oncerned about it reheating weirdly, but there are ways around that.

Kraft singles are not a bad idea. They have so much emulsifier in them that they're a cheat for cheese sauce. Starting with a rue and using good cheese tastes better, but American cheese slices can be added at the end to thicken and keep the sauce from separating.

if you add more cornstarch slurry it gets thicker and coats the noodles better. I personally like to take 1/2 a finely diced onion (or whole onion if small) and add it 5 minutes before adding the beef, it makes a huge difference in flavor! Lastly once its cooled and ready to serve, you could always add a dollop of sour cream and mix it in, it add a ton of flavor dimension with the slight acidity and fat.

You need to make a bishmel first. Melt butter on medium-low heat, don’t brown it. Add 2-3 Tbsp of flour. Wish till it’s a pasty consistency. And almost and sandy color. Add 1/2 cup of milk or heavy cream, pour slowly while wisking. Reduce heat to low, let it simmer for a few minutes to thicken. Add your spices, and remove from heat. Add grated cheese. (Shreds your cheese yourself, pre shredded cheese clumps) and stir in… boom cheese sauce.

You can still save it. Drain everything out, on the side, heat up some heavy cream or milk, blend of cheeses, smoked gouda, cheddar maybe even some sharp cheddar, add some cayenne, touch or garlic and onion powder, some all spice, throw in your grated cheese mix and let it thicken up. Add to noodles and bam, a saved helpme burger

I'd make a hamburger gravy then throw noodles at it. Cook the hamburger first, and when almost done, sprinkle enough flour to coat it and soak up the fat, and cook til brown. Reduce heat to low simmer. Start adding some milk, slowly, cup by cup, stirring continuously. It will bubble then thicken, then you'll add more milk, and repeat until you have all the liquid and consistency you want. Season with salt, garlic, and a shit load of pepper. Put it over any sort of pasta, but egg noodles are best. So filling and good.

OP (and anyone else interested) here's how you make homemade hamburger helper: ~1 lb ground beef ~ 1/2 cream cheese block ~ 1 cup uncooked elbow macaroni
Start the water for your elbow macaroni.
Cook and season ground beef to your liking (season salt, salt & pepper, etc.). Drain and put ground beef back in skillet/pan over "keep warm" or very low heat.
Cut the cream cheese into small pieces/cubes and put into pan with ground beef. Stir gently until melted and the geound beef is coated. (You can add more or less cream cheese to your liking.)
Drain elbow macaroni and return it to the pan it was boiled in. Put the ground beef/cream cheese mixture in wirh the macaroni and stir until ot's all coated with cream cheese. Enjoy!
You can increase the amount of any of the ingredients to taste.

Good work! Being honest, it doesn’t look very appealing, but for a first try, it could’ve turned out looking much worse. Making cheese sauce has a learning curve, and I’ve had my fair share of “trial and error.”
I actually make this a few times per month from scratch and it’s always better than even the boxed Velveeta dinners. I start by making a roux (butter and flour, heated on medium heat until it turns to a paste), then I add some chicken stock for flavor, milk, and seasonings (salt, pepper, onion powder, garlic powder), and whisk until combined. Lower the heat to medium low and then add the cheese (whatever kind floats your boat, but freshly shredded and non-smoked melts best) and stir with a spatula until the cheese has melted. Then I usually toss in the cooked pasta and ground beef and mix immediately before serving. If you let it stand too long and it thickens too much, just thin it with more milk.

This is what I do. Cook burger and noodles separately. Make the noodles like regular mac and cheese. Add the burger. then add more cheese and milk if needed. I also add Hellman's Mayo personal preference and taste
