A complementary protein to go with buckwheat would be legumes, nuts or seeds. To keep it in line with a Slavic dinner, what non-meat protein would you add? Lentils? Some other bean?

Buckwheat with beans is just a disgusting idea. It just feels wrong.
As a kid i often ate buckwheat with milk, butter and sugar. Although many people also find it disgusting.
Buckwheat almost always goes with meat.

Buckwheat with milk just unlocked a childhood memory. Gonna say, that sweet soup was so tasty, probably equivalent for sweet rice porridge in other places. Totally yum but not for all.

This is a goofy pointless story but one night partying late with friends.... in a quiet reflective moment my buddy goes "Yo, what the fuck is even in porridge?"
It was really funny.
Then the next morning a few of us went out for breakfast at a new place, and guess what was on the menu? Buckwheat porridge. I ordered it and it was delicious.

Never ate buckwheat. Just know that grains and legumes pair to create complete proteins. Some culture at some point in history had to have created a meal that pairs buckwheat with beans, nuts and/or seeds.

It's complete but far less digestible with a worse amino acid composition compared to animal protein. Less efficient protein but just under animal products and soy.

The very idea of buckwheat with beans, nuts and/or seeds is utterly, totally, completely revolting to me. War crime level stuff, straight to the Black Dolphin Prison with this heresy. Just thinking of it makes me feel nauseous.
Buckwheat is THEE porridge in our region, the staple of staples, and one of the healthiest foods out there, like benefits outta your ass healthy. There are many traditional ways it can be eaten and enjoyed. None of them include beans, nuts, or, God forbid, seeds.

Buckwheat noodles aka soba is actually wildly used in asian cultures. Many of their dishes using those noodles do include bean based products, and/or nuts, seeds. Pure buckwheat is a rather acquired taste and since you never ate it I'll assume you come from a place that doesn't locally use it so it's normal to not be aware of general taste/texture pairings. But grain like on OPs picture really doesn't play well with what you propose even if it might make sense strictly nutrition wise. Thankfully, human ingenuity helps to make food tasty as well as nutritious.

I am a meat eater all my life and aren't into the vegan versions of my country cuisine (no shade to those who do, just gonna get it out there). I'd say, buckwheat with legumes... would be strange in my part of the world for most? Mushrooms - that is totally a go. There is however plenty of dishes including carrots and kidney beans, so you can go that route.

When I saw this I was really hoping it was taco meat with Shredded cheese (pepper jack and maybe a really brightly colored sharp cheddar) Old El Paso hot n spicy packet mixed into a full lb. Of 90/10 ground beef.... maybe the Shredded Lettus, taco shells and warm flour tortillas were off camera for a nice surprise?? Anyone else hungry for tacos now?

Medieval peasant food is still food. No matter what anyone has to eat or has the money to eat or have available to them in the area that they're living. Food is food, simple as that. I've had some pretty poor looking meals, also have had some pretty nice looking ones. In that way I've been blessed. I hope all the rest of you could be just as blessed as that!

The sweet (not sugared!!!!!) room temp egg soup post was so terrible, genuinely think it's the worst one I've seen on here. Like I can get behind mystery slop and canned food and that blackberry mussels combo, but holy shit.
To me buckwheat is kind of odd because it has a stronger flavour than other grains but it's sooo... neutral? And adding sauce throws the taste off. Definitely needs some really greasy meat to balance it out haha.
