No. I get this stuff so that it can be used. Whether it is NOS or used, it doesn’t matter. I haven’t kept one single thing of my NOS hardware, software or games sealed.

Me too. A device is only going to last so long in this world, and it is likely already 3+ lifetime time ranges past it's originally intended lifespan as-is. Plastic gets brittle, electronics deteriorate. Many times, being used is what keeps things alive, and sitting around things rot away.
It might be worth something someday, but not in our lifetimes. Belloq said it best in Raiders of the Lost Ark:

Actually there are many hobbies that the collector often touches the items. Some examples: classic cars. Not only do they touch them, they actively maintain them. Movies. Often people collect many of them but still will watch them on occasion.

You do interact with toys and dolls and figurines and lego sets and such. That's why sealed boxes of old ones are cool -- they don't stay "new" very long.
The difference is that not many people collect computer mice, so they don't appreciate in value at all. Maybe something extremely rare would, like an old Kensington trackball or something.
I don't know, I just put my figurines on a shelf and look at them, there's nothing else I can really do with them anyway unless I'm staging a play fight between Geralt and Darth Vader?
Neat mouse for retro systems indeed! I've got an old GE PS/2 mouse that surprisingly has optical, a click wheel, and an extra button on either side for Forward and Backwards. We still use it on our modern system, an HP Workstation with i7 4770!
Only if I didn't intend to use it (personally, not very likely since I prefer lefty mice) - I opened up a sealed ATi All-in-Wonder X1900 a few years back because I got it with the intent to use it and it was a guilty pleasure doing so.
