Why are kebabs so ridiculously good?

They do feel like value to me. Like you get a mountain of meat and salad and sauce. The meat is basically lamb ham. Very fatty, salty, MSG, then grilled so it probably has addictive qualities in that respect.

The real secret: fatty meat. For the kebab house, it's much cheaper to use fatty meat. For you, it's much tastier. In the middle east there is a big tradition of using fatty bits of the animal for 'food of the poor.' Here's a video clip of an Iraqi restaurant cutting and grinding its kebab meat. [You're probably looking at 30-40% fat in the video](https://youtu.be/yDFHrnxZnlw?si=9YsrgkDXfwsZJ9-F&t=51), while your pricey supermarket mince throws around 5% like its a virtue. Flavour-wise, it's not.

I’m with you OP. I hardly have them but I can happily smash a kebab sober. And no I’ve never done drugs either.  They’re great because it’s meat, sauce, bread and crunchy veg. Hard to go wrong really.

Kebabs get a bad rep but if the meat *was* high quality they'd be easily the healthiest fast food.. As another poster said: meat, salad, sauce (+ bread). It's literally the perfect meal. Could eat that every day.

Not had a good one for ages. The takeaways round by me (Salford), are nasty, and the kebabs have zero flavour, I often wonder if they're seitan rather than real meat. What I wouldn't give for a doner that actually tastes of lamb.

I dunno about you but around me there’s been a massive uplift in quality. What was dad greasy mystery meat on a wilted salad is now lamb that tastes of lamb on fresh salad and chili sauce that actually has chillies in it

Start with the crazy high fat content and go from there. Doner is made from mutton flaps (yep). Check out the damage those flaps helped do in the South Pacific. I just buy the meat and chips, no pretense with lifeless vegetables 😄
