Decline of cash has probably paid a role as well. It's these sorts of vans where you're most likely to see those passive-aggressive "cash is king" notices, listing all of the reasons they prefer cash EXCEPT the real reason.

Several near me - go to B&Q carparks and usually one. Council got better at assessing hygiene standards so the ones left are usually fairly decent.

Social Media happened. It used to be that people would pull up in any old lay-by and buy a burger from an old caravan but, nowadays people are a little more discerning. Truckers and trade plate drivers still go to transport cafes and burger vans but, they are only going to the ones that have built up a good rep.

There’s quite a few around here - i know in my old village the council wouldn’t let them open bricks and mortar shops - but would allow burger vans in the evenings.

Tighter rules on food safety. Quite a few exist still but many didn't exactly have the highest food standards such as inadequate pest control measures.
