This is a bit more about the water than the heat.

The primary visual part of it is protein and lipids which aren’t fat soluble. So when the, cough nut (to be scientifically accurate) hits the water and the gel matrix that holds it all as one cough goo dissolves into the water and what’s left is the protein and fats that sort of just clump together.

This is also what makes it look cough like one was having a cottage cheese snack while washing up as all the proteins clump together and scatter the light more evenly. Just like if you put one scoop of powdered milk in 4 gallons of water. It will be pretty transparent until you boil all the water away and what’s left is the milk particles.

When left in air, the gel breaks down enzymatically and it turns into more of a liquid before drying. On a toaster strudel, similar concept likely but it would likely get more white and clumpy looking as the strudel soaks up the juices (….ew)
