I eat buckwheat all the time, occasionally with a sausage of some kind. It’s good eating. And yes, my wife is from the former Soviet Union.

I'm not great at describing such things, but I'll try. It's savory with a touch of nuttiness, very satisfying, complements pretty much anything, and you can mix in things like mushrooms as in the OP and fried onions. It's also pretty healthy compared to a lot of grains. I'd much rather have buckwheat than rice or quinoa as a side dish.
Note that the way my wife cooks it is to rinse and strain it an remove the bad bits, then she cooks it in a frying pan with a bit of water. It's not boiling it like rice, exactly. I'm not sure what you'd call the process. She tries to buy it already toasted (Russian stores sell it that way), but if it's not, then she toasts it in a frying pan for a few minutes. That brings out the flavor.

Thank you. That is helpful :) I'm also want try amaranth, millet, and teff (sp?). I'm really big on pasta and potatoes and eat a bit of rice too, but I'd like expand my horizons when it comes to starchy ans grainy side dishes.

I was born and raised in Indiana, so I'm with you on potatoes and pasta. I've tried a bunch of new things since I met my wife, and I'd rate buckwheat up there as one of my favorites.

Some ppls normal meals are abhorrent in other countries or even local but different demographic. I personally enjoy the contrast between "omg yeah that's universally disgusting" and "wait that's totally edible or tasty but x ppl are totally flipping their shit" popcorn show.

I mean, yeah. In Russia buckwheat is considered a normal grain, while, in arabic countries it's a cow's food.

All the time while growing up my Dad would never eat black-eyed peas -- he grew up on a farm so to him it was cattle feed. My mom was a good Southern cook and to her black-eyed peas were just another side dish.
