People are paying $60-$80k on BaT for the Hellcat.
At the moment, if you want a V8 SUV, the Durango R/T and Tahoe/Suburban are the only non-luxury options I see. Ford has completely ditched V8's outside of the Mustang. Everyone else is doing turbocharged V6's or online 4's.
I don’t think that you could adapt a 6.2 V8 in a big, full size SUV to adequately boost your CAFE average, not without hybridization. I don’t think people in the market for any R/Ts, SRTs, or Hellcats want any E-integration anytime soon.
The last few years have been more about emissions IIRC rather than straight MPG numbers. Hybridization would help with both. People say they get ~20-23 MPG Highway in the R/T Durangos, 12-14 City. I would imagine that with two electric motors it could have enough torque to easily handle 0-35/40 MPH before letting the V8 turn on, mated to a tall, lazy, efficient gear in that ZF 8-speed auto.
