So, what is the timeline of this new series?

So, are the teenage Beavis and Butt-head supposed to be the 1998 versions that went to the future or are they just a reboot in today’s time like in the 2011 continuation? If they are supposed to be from 1998, it is weird that Van-Driessen didn’t age at all.

I think they are in a timeline where they are in 2025 but everything is the same as when they were in 98
So no one is older. We still haven’t seen them interact with any of the teens from their old world yet, so I could be wrong

There was an episode with Stewart, but that was one of the episodes where they aged to a hard late '40s. Beavis destroyed both of his kidneys from drinking heavily, then Stewart donated one of his kidneys which was quickly destroyed when Beavis immediately started drinking again.

I’d be curious if they ever do an episode where the are young but Stewart is older. That’s one way we’d know. But I bet he’d be the same age. Multiverse possibilities are endless

The versions of teenage Beavis and Butt-head from the new series are clearly native to their year the episodes air (i.e. the season one versions are native to 2022, the season two versions are native to 2023, and so on). But since the introduction of a canonical multiverse in Do the Universe, that means that we're not always seeing the same exact versions of Beavis and Butt-head. This explains how they can die at the end of certain episodes without long-term consequences.
The '98 versions that were transplanted in '22 exists only in Do the Universe. And even then, those are the most recent variants from the original series. Canonically, they were born in 1980, as evident in The Judgement of Beavis, though this only applies to the '94 episodes.
TL;DR floating timelines, multiverse variants

There are 2 timelines. When they're teens it's the timeline where they got going into the future by a black hole during their trip to space. When they're old, it's the timeline that would've played out if the events in the first timeline didn't happen.

Van Dreissen has aged a little- you can see it in his eyes. Clean living probably helped him.

Some character have aged more than others or not at all. Van Driessen not so much but Todd has realistically, for instance. Obviously for creative reasons but I'd just say try not to over think it.

It's not important. They are just teen Beavis and Butt-Head I don't think you're meant to think about it since they die in several episodes and Beavis and Butt-Head isn't a show with heavy continuity.

during the movie they created two timelines, one where they're teenagers I'm the modern day and the extended cast is also their same ages. And one where they aged into adults since the 90s.

I understand that is what seems to be the implication from the movie, but it just doesn't appear that way on the show. We haven't seen any old versions of characters in the teenage timeline, but we do see Van-Driessen as young as ever.
