It is, and in anticipation in the spring I planted four varieties of tomatoes. I live alone. I've eaten every kind of tomato everything in the past few weeks and needed to diversify my sandwich game.

Garden tomatoes, red onion, peanut butter, mayonnaise, and bac-os (soy based fake bacon bits). Today I had to dig to the bottom of the freezer to find a bread type product to make it on because I eat it every day and am running out. Tomorrow I may have to just throw it all in a bowl.

I mean, if it isn’t sweetened peanut butter I could certainly see this working. I’d try it! My mother-in-law makes a pita or lavash wrap with tahini, yogurt, onion, tomato, cucumber, some crispy chickpeas and a light dusting of za’atar. Tastes great and I imagine the flavor profile isn’t too far from yours.
