It's probably not unknown, but mustard and mayonnaise is pretty fantastic. Try that on a beef salad sandwich.
Curry paste and mayonnaise is also pretty great. Maybe a drop of lemon juice in there.
And kimchi, tobasco, cucumber and mayonnaise makes an incredible salad to go with something like pizza. You need a lot of mayonnaise, mind, so maybe don't do this every day.
I think the point I'm trying to make is that you can add a LOT of things to mayonnaise.

I didn't know how unusual this is but my go to breakfast sandwich is bacon (salty), mushroom (earthy), tomato (sweet/fruity) and mayo (tangy) on a white roll (bready). It's the mayo that gets some upturned noses but it's perfection.

They're pretty basic, but everyone looks at me weird for tuna, cheese and beans on a jacket potato.
Order, from the bottom up, is - potato, butter, small amount of cheese, tuna (mayo), beans (Heinz 5 beans), more cheese.
