Yeah I would guess you don't get out much as "hot" in front "beef sandwich" or "turkey sandwich" always means its gonna be carved meat on bread smothered in gravy, so if one sees "hot chicken sandwich" on a menu one can pretty safely assume its like a "hot beef sandwich" or "hot turkey sandwich" and would come out like this smothered in gravy and therefore personally I would be very surprised if I got a "spicy" fried chicken sandwich after ordering a "hot chicken sandwich".

My local places don't serve them open face anymore. They all do it like what's shown here and you end up with one gravy drenched slice of bread with none on the turkey or other slice of bread. It's infuriating

For your future convenience, in [most of] Canada the form of chicken you mentioned in you comment above is typically called a chicken burger (which makes sense, really, since it's served in a bun), whereas a chicken sandwich is more commonly going to be some form of chicken, often sliced or grilled chicken between sliced bread (again, "sandwich" makes more sense to me here since it's made with bread and all)!

If someone asked me if I wanted a “chicken burger” I would assume it was equivalent to a turkey burger, meaning ground chicken pressed into a patty.

Don't encounter many ground chicken dishes out in the wild at your typical restaurant, really, but I suppose that would still technically fit the bill! If it's on a bun, it's a burger, dammit!
Usually, though, it's either going to be a chicken patty of chemically separated and formed chicken (think chicken nuggets, but bigger) that's got a breading or batter on it and is deep-fried, or a less fake-y, more genuine hunk of chicken meat, often breast, thigh or a mix of breast and thigh, that's also breaded or battered and then deep-fried.

Looks like the picture-perfect standard for a hot chicken where I'm from.
It's actually-hot chicken, likely wet, too - between 2 slices of plain, untoasted bread, with shitty packet brown sauce on it, plus peas, and you eat this with a knife and fork. A staple at most diners, yet generally unpopular as an order (not taste-wise).

In all fairness, poutine long ago evolved past simply being a regional thing and became one of the most well-known Canadian dishes that this country has! I'm not sure it's accurate anymore to call it a regional dish when the vast majority of Canada knows of and enjoys the dish on the regular!

I’ve had sandwiches like this all up and down the West Coast: it’s a much, much older thing than the Nashville style sandwich. Pretty much every greasy spoon diner in the country in ‘50s-‘90s had something like this on their menu. For comparison, Nashville-style hot chicken only became widely known in the late 2000s-2010s.

The canned peas are 100% necessary. No self respecting diner would use powdered gravy. Gravy is a key component in Québec cuisine for many dishes like poutine.

I agree with this concept, but this is in fact a shitty version of it. First off, no peas, ever. Second, this needs a side of mashed potatoes. (Maybe it’s under there?) Third, this looks like they just used powered brown gravy. Use real gravy or GTFO.

Mmmmm memories of my childhood eating at St-Hubert. I live in Ontario and this was definitely a treat given to us by Quebec. Peas were absolutely essential and they were canned peas too, which somehow makes it better.
