What's the absolute minimum you could do a weekly shop for?

If you still want the meat element these can pretty much all add chicken to. If you are feeling you have money to spare just add a chicken breast. If you are feeling really strapped for cash buy drumsticks then shred them

Having a good spice mix is key. I tend to always have in a ras el hanout and a rose harissa. Then you can buy whatever veg is on offer. I often grab sweet peppers, onions, aubergine, carrots and whatever is on a cheap offer or reduced. A big bag of dried chickpeas and kidney beans and alternate buying grains like rice, couscous, bulgar wheat. Some garlic and tinned tomatoes is also good to add. I then will roast some veg tossed in oil and spice or harissa add some chickpeas and serve with couscous or bulgar wheat. Peppers, onions, tinned tomatoes and kidney beans with some spice on rice make enough to have leftovers that can be mashed and put between 2 cheap tortillas with a bit of cheese then either microwaved or cooked in a dry frying pan. If you make a big enough portion you can also use this to top a baked potato or baked sweet potato. Cooking enough for 3 meals also saves on gas/electric. Chickpeas, half an onion, garlic, some window sill grown from seed coriander and parsley blitzed up into houmous adding water and/or oil to make it smoother topped with spiced roast carrots. If you're really hungry use tortilla from pack bought for the chilli quesadillas. If you can get a cheap curry powder you can use that with veg on offer like cauliflower, broccoli along with chickpeas or lentils to make a curry. I use more spices than just the curry powder most of the time as I have good selection of spices I've built up but if money is very short you can get away with just the curry powder or garam massala and serve with rice. The spices and dried pulses are the important things. They can last a few weeks so is easy to quickly build up a store cupboard that allows for variety
