OP, you can’t just use whatever pan you want for baked goods, and especially not lemon bars lol.

This recipe is meant to go into an 8”x8” pan. A loaf pan is 5”x3”. You have less surface area to work with, which means your crust is going too far up the sides and your filling is too high to bake properly.

Get the right pan lol. It’ll be fine after that.

Oof OP. This is the incorrect format for a lemon bar for so many reasons! It should be shortbread/crust and lemon curd in equal measure, like this: = .

I suspect you had trouble getting the curd to set when you’ve baked it into a loaf rather than a thin layer.
