After reading the label: Why bother with freeze dried veg?

I just saw that this auguson farms dried veggie medley is over half-off full price. (https://amzn.to/47Pbtfm if you are interested) I was curious about how freeze dried stuff tastes, so I bought around 2 cups of it from a bulk-bin store (in Canada) and added it to the following (after re-hydrating) - rice/lentils (aka kedgeree) - buttered pasta (stars, cooked in salt-water) - alphabet soup (alpha pasta, cooked in tomato broth) They were edible but not delicious. I thought, "at least it's adding veggies and fiber", but ...there's no THERE there. I looked at the nutrition label on the auguson farms one and it's all zeros, except for two 2% and one 4%. What is the purpose of adding what looks like confetti and tastes like sawdust to your food? I am a chef by profession, but this stuff never comes up in my cooking. Did I do something wrong and y'all think this stuff is actually good?
