We use shakshuka to to empty out our fridge. I’ll throw i. Spinach and zucchini or cabbage, we love it with bread and feta. It’s sooo good and super easy. You should do it

I would dice some peppers and onions and throw them in the sauce. Also I'd use seasoning, anything that'd work. Onion powder, garlic powder, chili powder, paprika, herbs, etc. Tho I found I don't like indian seasoning mixes on veg like I do on meat, so maybe be careful with more complicated seasoning mixes. Searing some sausage and throwing it in could be good too, but would prob be just fine w/o.

cook down the sauce the night before and give it time to relax and mingle.
Don't worry too much about chopping the ingredients evenly, or adding too much paprika.
Use the highest quality olive oil you can find.
Other than that it's ezpz.

I usually prep all the veggies ahead of time, by knife takes about 2 mins. I chop the onion and tomatoes and I add fresh peppers as well. While I’m chopping I put the cast iron on medium heat. Once I’m done I add the veggies and sauté for a minute, then add tomatoes. At this point you’re about 3-4min in. Then just add the paste and seasonings and stew the tomatoes. Once that’s done I add the eggs and cover until cooked but runny.
All in all, takes about 10 min.

Its not super difficult but the base recipe is tomatoes, bell peppers, onions, garlic, cumin, paprika, and then you can add whatever veg you like.

Unless you want the peppercorn heat and not the chilli pepper heat. They're different kinds of heat and sometimes you might want one and not the other
If I remember correctly, there are three different kinds of "spicy heat" in cooking, the first two being black pepper which can be very warm on your tongue and can make you sneeze but doesn't really linger, chilli pepper heat which simulates the sensation of actual physical heat in your mouth and can be felt on your lips, mouth and throat and can linger for a long time, and the third type of heat is what you get from mustard horseradish and wasabi. Which be overwhelmingly strong, you feel it go up the back of your throat to your nasal passages but it only lasts a moment and disappears completely almost instantly

There's a fourth too, Szechuan peppers don't contain capsaicin but they do contain something that triggers the touch receptors on your tongue rather than the heat ones. This is why Szechuan peppers make your mouth feel like itz buzzing or tingling.

I love using a mortar & pestle. It’s the fastest and easiest way make ginger-garlic paste, plus it’s easy to clean. And it’s fun to make curry paste and salsas.
One of my favorite smells is grinding cumin seeds which have been freshly toasted in a hot pan in a mortar and pestle.
I geek out on spices so much I should probably grow a handlebar mustache.

For anyone that does not think black pepper is flavorful, you should try this:
Take a steak. I like a Filet or NY Strip (Sirloin across the pond), because they are leaner cuts. The strip does have that delicious fat cap though! Any steak cut you want to eat will just about work with this.
I like to season my steaks by patting them dry with paper towels and then applying a healthy amount of coarse salt. Apply it from about 10 inches above the meat for even distribution. You will lose 25% of the salt that you sprinkle. Its okay. Do this to all sides of the meat and set it on a wire rack and tray. If you are grilling from start to finish, leave this on the counter for an hour to come up to room temp a bit, as cold meat will not cook as evenly. If you are going to reverse sear/sous vide, then place the meat into the fridge for at least 2 or 3 hours. I do my RS/SV seasoning in the morning, grilling seasoning right before cooking.
Once the steaks have been seasoned well, we can add our spices. Use another paper towel and dab the steaks again to remove excess moisture. A dry edge will form a deep, golden brown crust without causing a thick Grey band.
The next step is add enough of a high-smoke-temp oil so that the spices will stick. You dont need to drown the steak, just a nice shine is all you need. Now, apply coarse, fresh ground pepper ALL OVER the steak. You basically do not want to see the meat because its covered with peppercorns. Then you apply a coating of garlic POWDER all over the meat. Don't use garlic salt or you'll be a very salty boy when you eat it.
I like to reverse sear with a probe in the steak. Oven set to 250, I pull the steak around 125-130, meaning it should hit about 135 max. My wife likes steaks done a bit more than me, otherwise that would probably be 120-125 pulling. We hit the top end of medium rare/bottom end of medium, usually.
When the steak is almost done, I get the cast iron skillet up to around 400°. Once that is ready, it gets a bit of oil just to make sure we get a good browning on the sear, and then the steak goes in. 30 secs each side, and flip until its done, basically. You will slowly get the browning to build up, and its okay to move the meat around a bit after the first 30 sec on each side. You want all parts of the side of the meat to make contact with the pan surface at some point.
The only difference for the searing part is if you have a fat cap to render. Leave the fat cap down for like...2 minutes. It needs a good application of direct heat to properly render that down, and when you think of juicy meat, its usually because it has a lot of rendered fat.
And really, that is about it. All you need for a steak is Salt, Pepper, and Garlic. Everything else is just an accessory, and I think everyone should learn to cook a steak like this before they learn any other way, IMO. But I am biased, :).

Mate, I eat every kind of pepper and spice to the point it's given me a hernia. But of all things, we don't need to be up ourselves over some pepper. Sometimes it's dusty. Sometimes it's granular. To be fair, I'm a chef and I'll use a grain mill to crack pepper for steaks, then sift it through a chinois to get fine ground pepper for everything else. If I want to be super extra I can sift it again to get the fine pepper powder, but I don't much like using that for anything outside sauces etc

I recently got a fancy peugot pepper milk and the grind is so fine I have been regularly sneezing from it like a damn cartoon. The same peppercorns I had in my cheap grinder before it broke hit so much harder with an actual fine grind to them.

If you have one similar to mine, you can adapt the fineness of the grind! If yours also has markings along the bottom part like I, II, III, etcetera, and an I on the second bottom part, try twisting the bottom to align the lines on it with the line on the second part to adapt the fineness! Setting II is as fine as pre-ground pepper, setting I is even finer, and it goes up to setting IIIII which still leaves bits of peppercorn to bite down on, and they each have their function

We've bought a new pepper mill. It came with a tiny bag of expensive pepper. I laughed at the ridiculously tiny bag. But yeah, it's so strong that you only need like 10% the amount of "regular" crappy pepper. And it just tastes way better.

Have you ever considered that your pepper is probably extremely stale?
You guys should consider buying some high quality peppercorns and putting them in a grinder.
I used to use this much pepper too until I realized that my people just didn't have any flavor.
If your husband had real black pepper, and I'm talking about the good kind not just the store kind, then that amount of pepper would have made the dish completely inedible.
My guess is that this amount of black pepper is necessary just to be able to barely taste it at all. Those eggs probably taste like they have sand on them too lol

I think this is called pure ground pepper, and I'm glad other people are saying it bland. My only problem with this is the pepper appears to be from a pepper shaker, not freshly ground from a pepper grinder. (I could be wrong). If you really love that man get him a pepper grinder as a gift, it’s a game changer, and because it’s better he will actually use less!
