Do you hire people as part of your job? If so, is it obvious when applicants are using AI to write their applications, and how do you deal with it?

I'm genuinely curious. I assume that the number of people who use AI to write cover letters and CVs has exploded in the past few years. Is it obvious? How does it affect your evaluation of a candidate?
