When buying coffee shop coffee, do you ask for it 'extra hot'?

There's two main reasons 1. If it's a "black" drink (Espresso, Americano or Filter for example) there's usually a window of temperature to appropriately brew at which is around 90c (probably lower as most chains have darker roasts so don't need to have as high temperature to extract). If you go hotter you'll likely over extract which won't taste good and they're unlikely to make it different to how they're trained because of that. 2. If it's milk based, the proteins denature above a certain temperature. Usually this is between 60-70c so they don't take it above 60c for that reason. It will make the milk taste cooked and not as expected.
