I mean, *pho* specifically is made of a beef bone broth that has to be simmered for hours, to get the fat and protein from the marrow, along with spices like star anise, cardamom, and some common ones here in the US. It's then served at the time of order with one of like 16 options from the rest of the cow. Lime wedges, bean sprouts, basil leaves, jalapenos, chili oil, and hot sauce are served as condiments to your desire. Remember that dumb scene from Crocodile Dundee where he dumps the cocaine into the boiling water? If you think all soup is "just soup" you're grossly mistaken. Nobody thinks "pho" is cool "like smoking" because it comes from a different culture. It's pretty fucking magical.

I understand if you put extra effort into cooking, it yields much better results. I also get that you're enamored by it. Doesn't change the fact that pho is, BY DEFINITION, a soup. And I would guarantee not all of the 20some pho shops that popped up around my city put as much effort into it as you've described. And yes, things that come from different cultures are majorly hyped up and loved by the public because it's suddenly popular. Boba tea, ramen bars, pho... aioli is on everything now. I'm not saying it won't stick around, but it is definitely a current trend.

Hah I remember my elementary school trying them in the early 90s. I think by day 3 kids were sneaking them onto the playground and throwing them at each other. Day 4 kids were taking them on the bus and throwing them at passing cars. By the next Monday we were back to cartons. Never saw another cup sized bag of milk ever since.

I know a kid that would pretend he had women’s breasts and run around the playground yelling “touch my boobies”. After a few days, some kid took the pointy little straw and jammed it through the pouch so hard, it went through his shirt, both sides of the pouch and about 1/4” into his peck. I can't for the life of me remember what they tasted like, but I do remember liking them more or less as a novelty. Not necessarily something you'd drink on a regular basis but here and there.  I think mostly the reaction back then was people were generally grossed out by the floating gel balls, but Boba tea is all the rage now so I think a comeback is in order...

If you removed the liquid, and added water, the bubbles couldn't float anymore. They'd sink. The liquid was suspending them. Not sure what to do with that I fo, but the sugar content of that liquid must have been extraordinary.

I tried one once and didn't care for it at all. It obviously has been a very VERY long time, but if I remember right the juice had an off flavor to it, and the orbs were flavorless at best and had a very odd texture. And I like boba with tapioca pearls, so these things were just like all of the "wrong" ways to do it.
