Why do only Indians work at Indian restaurants?

Something I’ve always wondered. How do they advertise as “only Indian people need apply” when searching for chefs/waiters. I can make a variety of currys as good as any Indian takeaway because it’s basically like a cocktail but with food. You have your base meat and then a mixture of spices measured out in various quantities plus your base sauce which would either be tomato based, cream based etc so what I’m trying to say is, it must only assist with the authentic experience to have the food prepared and served by Indian chefs and waiters because the quality of the food as long as prepared in the correct way, cannot stray from what it is supposed to be no matter who it is prepared and served by, as long as it’s done correctly.
