I’m familiar with ray tracing. I know path tracing is an even more intense version of that right? My 7900xtx couldn’t handle it in cyberpunk. I prefer to avoid upscaling. Why?

Because all of those are leaps and bounds better on 5080. RT to the level where it can be few times faster than 7900XTX (like in mentioned Cyberpunk) AND will look better due to better featureset. Upscaling on 5080 is at the level where Quality upscaling is often better looking than no upscaling, while also running noticeably faster.
So if RT/PT is something you value and upscaling is on the table (and it really should be on the table these days) - then 5080 is superior by hugely bigger margin than benchmarks numbers would suggest.

It’s better than even the benchmark suggests? I’ve actually heard that the user benchmark site is very biased towards nvidia. This is making me consider the upgrade

Userbenchmark is utter shit. Never use it. Just close it and never open again.
As for "better than benchmarks" - it is in collective meaning accumulating all 5080 that 7900XTX doesn't. On average it is like 15-20% faster... But there are games with RT or, even worse, PT, where 5080 will be much faster than those 15-20% suggest. Then you ALSO enable DLSS - 5080 becomes even faster, while game will look comparable or, in some cases, even better than native. Then, if we talk about RT/PT - you enable Ray Reconstruction - and game starts looking much-much better on top of running much faster.
For general gaming I wouldn't consider 7900XTX to 5080 a good upgrade. Average performance is not that far apart to be worth it IMO. And 5080 in general is relatively poor value - much pricier than 5070Ti while not being correspondingly faster. But if you really want to try RT/PT or NV featureset - it might be worth it.

You never mentioned for what, for gaming it would be dumb buying Intel and not getting a 9800X3D but for productivity it would be a decent improvement depending on the price.
To clarify do you already have the 7900XTX if you don't then get the 5080 build.

It's hard to give you a specific number of how much faster both builds are because no one has benchmarked those specific configurations and compared them.
We can tell you that the Core Ultra 7 265K is faster than the i7-12700K. We can also tell you that the RTX 5080 is faster than the 7900 XTX.

The motherboard simply allows the CPU to talk to the rest of the components. It doesn't impact performance unless there's something wrong with it, such as not providing enough power to the CPU.

Most reviewers don't test Wi-Fi performance on motherboards. So, it's hard to say. You could try to find reviews for the specific motherboards. But, you didn't provide enough information to find reviews.

Better off upgrading the CPU to a 7800X3D and 9800X3D. Motherboard has zero impact on performance so always get the cheapest one you can that is still of decent quality and has the features you want. Good rule of thumb is to spend somewhere around $150-200 USD,
