Can I ask a question about shops offering discounts and not honouring them?

Local BP garage keeps putting up a card saying 2 for £10 on peroni. Card directly next to it says Peroni on offer £6.50. Till recognises the latter offer. Technically the shop doesn't have to honour the 2 for £10 offer but they did this evening. Looking it up I see that the contract between the buyer and the shop is set at the point that the transaction is completed. If I get a receipt for the offer at £10, will they have to keep offering it just for me?
Can someone with more legal knowledge help me keep getting by preferred beer at a cheaper price without me making an arse if myself by misunderstanding my rights?

No, the bit about completion means if they honoired it for you this time, and you gave them £10 and they gave you the beer, they can't then follow you out into the car park and demand thatyou pay an extra £3.
The trasnaction is compelted sat the poijt you give them money andthey give you beer.
IF you go back in, that's a totally new transaction

No - previous purchases do not create a future contract or entitlement to receive the same goods for the same price, otherwise that Tesco receipt I found from 1992 would be very valuable now...
Retailers also have no obligation to serve anyone in any event; they're free to refuse service to any person for any reason (as long as it isn't discriminatory, obviously).
In reality, they'd say "sorry, it's £6.50 now, that offer is old", and you'd either agree that price, or not buy it at all.

I mean, I jokingly said at the end of the transaction that they should remove the sign after serving me, as both signs being there show they've clearly made a mistake. But if I go back and they haven't done anything about it they could still refuse?

Yep, at no point do they have to sell OP anything for anything.
But entirely seperately they are guilty of some infractions if they know about it and do nothing.

I agree, they absolutely should remove the old signage, and leaving it up after you've previously reported to them (and they've refused to honour the price) could get them in a bit of bother with Trading Standards.
Mistaken prices happen all the time. Failing to address it after attention being brought to it could be a shady business practice (e.g. false advertising).
It could be as simple as the person you reported it to was a disinterested part-time student who took no action. If it's still there next time, report it to a manager. If it's still there after that, report to Trading Standards.
Unfortunately, it still wouldn't mean you're entitled to it at that price, but they may well honour it as a gesture of goodwill/form of apology/acknowledgement of their error. Always worth asking but they're still entitled to say no.

Well the guy who sorted it for me is there all the time so I guess it's his main job and he's sound, and I've no interest in being that guy (especially since it's the only place I can get to in an evening if I want a beer).
I'll just keep being nice about it until they eventually twig.

They can charge you anything they want at the till - What things are labelled as is irrelevant and completely un-binding.

As silly as the situation seems, I would put it down to accidental mis-pricing rather than anything more malicious.

I worked in retail for 11 years so I'm used to entitled chumps like myself claiming all sorts. Not in my interest to ruin my relationship with my only local late night alcohol provider over £3

No. It's a separate contract for each transaction. The price you paid last time is the price you paid last time. Else every sale price would have to be offered forever!
It's shitty business but the first half is right. The law allows for what amount to pricing errors on the shop floor. Once you're at the till, they offer a final price and you are free to accept it or not. You are also free to negotiate, and they are free to decline.

Likely just not reflected in the POS system - someone in HQ hasn't updated the database with the correct prices/discounts. I've had it a few times where the vouchers I have for co-op don't actually come off my bill & then the til person will have to apply the discount manually.
