Anybody have any recommendations for Skegness to Edinburgh pitstops?

On Monday we'll be driving from Skegness to Edinburgh, anybody have any good recommendations for pitstops on the way? 2 adults and 2 kids (8+5).

Knaresborough? It’s not too far from the a1 there’s a paddling pool and a park , it’s a nice town to mooch about

Depending on age of the kids I'd drop into Barter Bookshop in Alnwick. Bamburgh castle is not far off the A1, Berwick upon Tweed and Dunbar even less so.
