TBH - I meal prep chicken on a sheetpan and enjoy it. I do add more seasonings to mine and coat them in oil, but it tastes great and it's easy protein. Toss them on salads, bowls, in wraps, etc.

Boiled chicken is actually super dry. It's enough heat to squeeze all moisture from chicken breast. Poaching, which means that water would be around 70-80C is quite good technique, but it's better with some more flavorful liquid.
