I mean it depends on how hot/cold it is right? We live in Australia and during the summer the ambient temperature would destroy most foods overnight but during winter it's cold enough that my mum leaves pots of soup or sauce to cool overnight and it's never been an issue. She's been a caterer, run multiple successful food/cafe businesses, and is one of the best cooks I know, she's never made anything that's given anyone in our house food poisoning. I think the whole 2 hour shit is an American thing.
We also leave our eggs on the shelves here. That's how they come in supermarkets. Not a problem. I think y'all mfs are just built softer.

The egg thing is different in america for other reasons. Americans farmers wash the eggs to prevent salmonella being transmitted, which removes the eggs natural protection (cuticle) and it has to be stored in cold. European and Australian farmers donāt wash eggs and they donāt spoil at room temperature because of the protective lauer that prevents any pathigens from getting inside the egg. Washing is not necessary because we vaccinate the chicken against salmonella.

Certain foods do spoil after a few hours, but most cooked foods don't. Depends on the climate too.
Leftovers, salads, frozen foods and in the fridge at the supermarket can develop bacteria when they defrost after an hour or two.

The egg thing is because in the US the eggs are washed pretty quickly after harvesting. Unless you live in a universe with different laws, the danger zone is a real thing, and leaving food out for more than 2 hours allows bacteria to grow rapidly. Of course, there are many recipes we humans invented to preserve food (anything heavily salted or fermented), making it safer for longer.

I can do one night if the food was cooked in the evening and put away in the morning, and was covered, and the weather isn't warm, then I think that's alright. I eat late and sometimes the dinner I make is too hot to go in the fridge, then I put it away the next AM. Not gotten sick yet.

Some of mine and my siblings childhood have been recontextualized now that we're adults and understand food safety.
What our parents called "the flu" was actually all of us getting serious food poisoning on a regular basis because my parents didn't really understand or believe in any kind of food safety measures. They'd make spaghetti sauce and leave it on low heat overnight (at a warm temp that wouldnt kill anything), leave meat out on the counter all day (12 hours plus) to thaw before cooking it, can relish with a little bit of flour in it to thicken (flour carries botulism, its a deadly risk)
And as an adult I realize I adopted some behaviours that Im realizing Im not comfortable with, like I used to make sandwiches with meat that Id leave in a backpack for 5-6 hours before eating them when I was younger and didn't see any of the harm in it. Tried to pack myself a sandwich for lunch the other day and thought about that and realized that it was a terrible idea lmao

If it's constantly boiling it could be a perpetual stew which was a way that people ate and prepared food; throw in a couple new ingredients a day and it boils and changes over time. But if it's not kept up to a certain temperature to prevent the development of bacteria.... it gets bad

It never happens, itās like theyāve developed an immunity to it. My dad grew up with this cooking, and regardless of what anybody says (including my mom and I who have permits for safely handling and dealing with food) he still cooks like it to this day.
Cross contamination, mold, you name it. Heāll eat it. Recently, he made a pot roast, and literally let it sit out on the counter for a week, uncovered, and ate dried out bowls everyday. He never gets sick.

I think it's fat. If you stick a hot pot in the fridge with the lid on, the condensation from the lid drips down and causes those round spots of fat to solidify in the shape of the cold water drop.
My source is I was cooking beef bourguignon and had to run my kid the emergency room. I stuck the entire pot into the fridge, hot, and it looked exactly like the spores galore one. You could see were the condensation dripped off the lid lined up with the small circles of fat.

There was once a slice of pizza that got left out on the counter for 24 hours, then got put in the fridge RAW. No plate. No paper towel. Just pizza slice straight up on the dirty refrigerator shelf. It was then taken out a day later and left on the counter (again, rawdogging the counter) to which I tried to throw it away. Someone then took it out of the compost bin when I was out of the room, put it back on the counter (you guessed it, raw), until it was consumed by 2 separate family members who kept cutting pieces off of it throughout the day like it was a summer sausage
