Fort Belvoir isn't even remotely close to big enough to house all of the people who work at the pentagon. There are about 24,000 personnel working at the pentagon and Ft Belvoir only has around 8000 residents. And many of those work elsewhere (like on the base itself).
Most of the people who work at the Pentagon live in normal houses/apartments across the DMV area. In addition, a significant portion of the personnel take mass transit instead of driving. There is both a metro station and a good sized bus hub just outside one of the entrances.

Of course, everyone (except media correspondents) are required. People in the Pentagon will have trouble working if the trash isn’t ever cleaned out, but if the janitors can’t show up late for a week it won’t cripple the pentagon’s operations.

Every military unit I've ever been in had showers and galleys in its primary building. Hell there are plenty of buildings you wouldn't expect to have those facilities available. If we needed to stick around for extended periods, it wouldn't be hard to live off MREs and sleep in the spaces and stay somewhat clean.
