If you’re asking if specifically about soundtracks, the one I liked the most was Mortal Kombat. I had really low expectations of that movie, so it actually turned out better than I thought it would.
A close second would be Blade.
I think I had a Columbia House membership at that time, so I bought a lot more CDs than I otherwise would have.

Last Action Hero was a pretty mediocre movie with a brilliant soundtrack.
Also love Jurassic Park’s score.
Escape from LA is a rocker, so is Twister (especially Human’s Being, which feels like DLR Van Halen, IMO).
