Stupid question, but could that thing even stay sunny side up if they shot all rockets at the same time? Or would it look like my washing machine on a spin cycle?

I'd assume the nature of the launcher, venting most of the thrust out of the back, would help with keeping the platform upright. However, even then, most of the footage of multiple rocket launchers from the period show they still shake quite a bit. So I'd imagine accuracy would be non-existent outside of a couple hundred meters. I still wouldn't want to fire that thing.

Tbf accuracy isn’t really the main goal with MRLS. It’s all about bringing as much firepower as quickly as possible, at almost the same moment or very short intervals to a general area that needs suppressing or active removal. It’s more a weapon of terror compared to tube arty.

Looks like a Pak 40 75mm mechanism is used for some of the adjustments/aiming.
