It's really just a mix of whatever veggies and meat you have, you're supposed to stir fry them with soy sauce and oyster sauce. At least that's how I do it. But here it looks like they just boiled everything together veggies and chicken lol.

There are some Chinese restaurants that insist chow mein doesn't have noodles and some (most) that do include noodles. Pretty sure "Chow mein" means fried noodles, so I'm not sure whats going on there.

There was a time where Chinese food was an art form even in small operations. The family run restaurants brought their regional cuisine and, Chop Suey, Chow Mein, and Egg Foo Young, Moo goo Gai Pan..etc became early ambassadors to the cuisine. Then, deep fried with sugar sauce came into play to adapt to American Palates. Now, those restaurants provided revenue for the children and grand-children to go to college, live out an American dream and they don’t want to slave over hot woks and deep fryers. Can’t blame them. Have you ever seen how the restaurant family eats “family meal”? It’s looks better than what you order! Because it’s hard to sell the real deal anyway. Furthermore, other people see cash cow in trying to buy out or take over these restaurants . And have NO CLUE how to do it! If your local Chinese family restaurant is still pumping out good food.. you see the real deal. Go and get some. It’s going corporate or fading away. Look I to recent radio and video documentaries and podcasts about this phenomenon.

I mean, all the dishes you mentioned in the beginning were heavily modified for the American palate already. They were literally the cheapest shit thrown in a wok with tons of filler like broccoli or cabbage. Chop suey basically means "miscellaneous crap." Like, I grew up eating Chinese food in the US and never ever had chop suey or moo goo gai pan. I never even heard of crab rangoon until a few years ago.

Absolutely. Your commentary is correct. And I can’t order Chinese for my family without General Tso’s and Cream Cheese Wontons being the main goal. I had the great opportunity to eat traditional Chinese in Columbia , MO with Ren Wang Li and Sunday’s in Dallas where chicken feet were freakin delicious. Meat on the bone.. fried rice as a true “leftover “ dish. Moon cake. Rare wheat crop noodles. Texture oriented foods. No American really wanted to try. But, Singapore Mai Fun and Spicy Bean Curd , or Hot and Sour Soup or my go to. Still Americanized .. but sooo amazing! Chinese long beans.. cmon. Dim Sum is hard to come by these days. But, Noodles and Dumplings franchise is keeping that alive. They are still making BANG NOODLES to ORDER. Right in front of you! Soup dumplings.. open kitchen crazy. And I Love Panda Express! Mushroom Chicken. Delicious.
The history is so rich as it transcends and transpires and , unfortunately, often disappears in America. I just hope those who take it over and make it like the picture of origin in this thread.. don’t rob and cheat us out of the opportunity.
