Removing shifters and gears: Is that possible?

Alright, I know this going to be one of the more bizarre questions that's been asked on this forum but here goes.
I have a ~~Torque~~ "cadence sensing" motor e-bike. I basically barely need to pedal to hit pretty solid speeds (~20 mph). It doesn't bother me at all to be physically "disconnected" from the manual operation of the bike. I happily use it as a glorified electric moped.
So, the shifter... it just takes up space on my handlebar. I don't need it. I also don't need gearing at all, because I literally just leave my bike in 1st gear (of 7), and operate it easily. Since I don't need to exert myself at all, and since the power of my pedaling is almost entirely a non-factor, I never need to shift to tackle any hill, etc.
The question then is: Can I just remove it and simplify my bike? Can I remove the shifter and remove all the gears (the cassette?) and just leave it a simple, gearless bike? Is this a terrible idea? It is very difficult to do? I'd be willing to hire a pro to do it.

You can certainly replace the gears with just one. Keep in mind that electric motors operate best when they’re spinning fast. So if you’ve got a lot of hills, bogging down your motor because you can’t shift down will lead to premature motor failure.
Edit: just realized you said you leave it in first gear all the time anyway, so you’ll probably be fine.

I bet when OP says first gear, he is talking about 7th. OP, is 1st gear the smallest gear or the largest?

Hah, you're right. I actually sold my bike and brought a scooter :)
