Wiring Mock-Up Power Source?

Got a 1960 Studebaker Hawk I’m working on. Wiring harness was shot and I wanted to make modifications anyways, so I figured it’s as good a time as any yo learn how to wire a car.
My one of my favorite Professors on YouTube University has been Wiring Rescue. I really like the idea of making miniature versions of a desired circuit on a peg board and testing it before translating the setup to the vehicle.
Question I have is how to power my mini circuit. Will the little $10 Battery Maintainer work? Link - https://www.harborfreight.com/12v-automatic-battery-maintainer-59000.html
If not, any suggestions?

I generally use a jumper box, the kind that don’t need to see a load to go live, a small lawn mower batter or just a car battery itself for those kinds of projects. Depends on what’s handy.

Those typically work off there being a big load on the other side (a battery). I’d look for a 12v power supply
