I’ve received a PCN from UKPS in England, do you think it’s worth appealing, or would it be better to just pay it?

It seems unlikely that anyone has successfully had a PCN cancelled using that bullshit, what's more likely is that your parking bill will go up and the longer you spend with your head up your arse denying it's legality the bigger the bill will get. It is true that you can get a ticket cancelled against YOU but to achieve this you will need to provide the details of who was driving.
Return to the carpark to establish that the signage is missing or insufficient, take photos to prove your point.
Or
There's also the option of going to the retailer with receipts to show you were a customer at the time, they might get the PCN cancelled for you.

Mate I got off one when I asked for proof that there clocks were accurate, they said it was in accordance with the talking clock , I dismissed it as hear say , as I needed proof, never heard anything back , haven’t payed one in the past 15 years.

Did you go into Wing Yip and buy anything, or did you just use their car park? Wing Yip is quite a big place and also has a restaurant attached, so you could plausibly be a customer of the supermarket, have lunch at the Chinese restaurant, and overstay the parking time (no idea how long it is).
I know the location, it's pretty obvious that all the land is Wing Yip's, I'd just pay the thing.

So that's not really practical to do in 1.5 hours... So this probably has happened before to others.... I'd ask Wing Yip if they can help get it cancelled

You should post this in r/LegalAdviceUK. There are solicitors and a couple of barristers that regularly post who might give you good advice.

And if they do, what has OP lost? The response is almost arguing a point of contract law. I don’t go on Pepipoo so I don’t know if it’s just war stories from armchair lawyers that have had a degree of success or bona fide legal professionals.
Most of the parking cases I’m aware of are a case of bluff and get dismissed before trial because a defendant wants to go to trial and the parking company withdraw their case, or because they are undefended by either party. That’s not to say OP won’t have the same experience if push to go to trial, they if your bluff is called, you want to be on solid ground legally.

Until you know who was the DRIVER of the vehicle was ,you’re just the REGISTERED KEEPER, and not liable for breech of contract, ask for better evidence of the driver, so that you can act in accordance with the law (contract law ) just blag them.give them 14 days notice. And any other communications from today’s day you will apply fees for by doing so UKPS agree to be liable, and send them a fee schedule, failing that ask them to take it to small claims. It boils my piss . Good luck.

Post in money save expert forum. They have most up to date information. I don’t think this is a compliant Notice to Keeper, but I’m NAL and it was a few years ago I last had one of these.
They generally rely on bullying to get people to pay, regardless of the legitimacy of their claim.

Go to pepipoo forums, and read up on the law, as you may still have a valid appeal - on the grounds that the NTK (notice to keeper) may not comply with legal requirements. If it doesn't, it's irrelevant if you or the driver are guilty - you'd win the appeal by default. Ignore advice on not appealing, until you understand this properly.
Fwiw I no longer remember the legislation well enough to tell you if this ntk is valid or not, but it's easy enough to establish. And a lot of private parking companies apparently still don't comply with legal requirements (which always surprised me), and rely on you just paying

Honestly follow the advice you get on FTLA and the MSE parking ticket forums and that advice only, they are the best. I’ve never paid a private parking ticket thanks to those.

From your images of the CCTV I can see further signage on the walls surrounding the car park. I don’t really think there is enough of a grey area to appeal this one. Also given where the CCTV is pointing that would be the ‘private land’ within the green fenced area.

As far as I can tell from when I was there and also looking at Google Maps the big sign above the brick wall is the only place that states time limits. I was under the impression therefore the time limit only applies to cars that enter the tunnel and park beneath that enclosure. I parked outside of that area and whilst there is signage around stating it is a private car park there is no mention of how long you are allowed to park there.
