One Setup for three types of play

Hey! I would like some advice on how to play games in 3 different ways on one hardware setup:
- Regular gaming at the desk - For playing with friends, games such as world of warcraft, battlefront 2, sea of thieves, or Baldurs gate 3.
- This works OK on my current setup but would be nice with an upgrade
- Gaming on my couch on the TV with a controller, playing more demanding games such as the new Indiana jones, Doom dark ages, elden ring, expedition 33, witcher 4 (when it comes out) and more. Also some party/coop games with friends and girlfriend.
- The same type of gaming as on point 2, but not on the TV but on a smaller display, so that my girlfriend can watch some TV and I can game next to her.
I was looking into the new switch 2 since it solves points 2 & 3 but the high price and limited games (and the price of the games) + performance got me to reconsider. Also I want to keep being able to play with friends every now and then.
Budget for upgrade: around 1500 euro depending on what I get for it.
My current setup: I can already do light gaming with my current setup - monitor, peripherals, and an okay laptop that handles some light gaming on low settings. Laptop: 16gb ram, i7-11390H (3,4GHz, 4 cores) and has RTX3050-laptop card.
Notes:
- I would be open to building stationary PC if it's somewhat Compact and I just unplug from my desk and move it to the TV.
- Also, for the small screen on the couch I would be OK with wires but preferably not. Would be real nice if I could use my laptop just as a screen to a new PC or similar.
- Also, I've tried out NVIDIA NOW and it does not really work for me since my wifi is pretty weak and it stutters on 720p, I would be concerned about this consistently performing for me.
Any ideas for how to solve this setup?

Steam Link. This is an app that you install to stream steam games from your primary desktop to a secondary system (could be your laptop, a cheap mini pc or I think even something like a fire tv stick) Also, steam used to make a small hardware device with the same name that does the same thing that you might be able to find used for pretty cheap.

Connect a PC to a monitor for gaming at a desk. Connect it to the TV as well to game on it. Use Sunshine/Moonlight to stream from the PC to your laptop to game on the smaller screen. Connect the laptop to the TV and stream to it if connecting the PC directly to the TV is not viable.
