Level/Tier/class 3 e-bikes, will cops care if I never go above 20 mph?

A class 3 ebike is all I can seem to find with bikes that I'd like. I just want to travel long distances, but im afraid that operating a Class 3 will get me pulled over. I have 2 years until im "legally" allowed to ride it. I will respect every single rule about riding bikes, but if I try to like bike to the Capitol, a 5.8 mile bike ride, would I get pulled over for operating this?

They will care when you run stoplights, cut people off, break laws. They won't be able to spot the difference between Class 2 or 3 from a distance. Don't ride like a jerk and you'll be ok.

Usually I like to stick to sidewalks, when I get the e-bike, should I start getting used to riding on the side of the road?

As far as I am aware, sidewalks are not legally allowed paths for any bikes, let alone for eBikes. Your city may be different than mine. I have been pulled over as a kid for riding on the sidewalk.

I'd guess cops don't even know the law so as long as you're not being dumb you're probably fine. I always said I'd go slower if I ever get ticketed and 12,000 miles and 6 years later it still hasn't happened.

Cops won't care if you do go over 20 lmao, at least in America there's very little enforcement that I'm seeing if ebikes.
Mine goes 40, I've yet to try zooming past a cop at that speed but I have passed by at 35 and they didn't even act like it was unusual. This may not apply to other countries....
