Wasn't he like the snuff film producer in 8mm? It was something like that. Whenever the bill called for a creepy guy with that accent, they called him.
But it wasn't till I saw this post that I realized, he's like almost literally the same guy in The Big Lebowski and Fargo which are both Cohen Brothers films from the 90's. A German, scumbag, criminal guy who loves pancakes. In TBL he's cutting off people's toes and threatening castration and in Fargo he put a whole person through a wood chipper...
