Adaptions that occur within a species can take place within a handful of generations. Simple organisms can evolve new adaptations in days, no eons. You can easily do an egg crust. So, simply dab the fish fillet in a little flour to make the egg stick better, then pull it through a bowl of thoroughly stirred eggs, with seasoning added. After that get to frying. You can now pour any remaining egg over the fillet after the first flip.
