Tastes good but the colour is throwing me off so bad

If I'd have to take a guess on the lack of effort, I would say it's just mushrooms and onions tossed around in a pan, I don't even think any butter or oil was used, just cook until you get a lot of water out. Yes, onions contain a lot of water, more so than mushrooms.

The missing brownfulness should have come from onion + oil (grease) + high temperature. To reach the required temperature, the onion needs to be heated until it gives up all of its water, and then continue to be heated carefully so as to brown (react) without blackening (char). The choice of oil is important too but I don't know much.

Type of oil doesn’t matter too much, as long as you’re not just using straight up butter. Something with a higher smoke point like canola oil, corn oil, or grape seed oil will do the trick. Even when you get a bit too much char, toss in a little water to deglaze the pan and it will add to the caramel color you’re looking for. Don’t forget to cook the water out of the mushrooms too!

can you bestow more cooking science upon me, o wisened one?

Truth 101, right there. I always tell people I’ve probably thrown away more plates than they’ve eaten.

Or beef bouillon/Worcestershire sauce. 😋
IQ_less@reddit
Its ok. Just add some green onions to balance out the dull color and bring in some freshness and its ready to go.

I think those were those fake surimi canned eels
jazzgrackle@reddit
Once you get past the fact that it looks like the contents of a sewer drain it doesn’t look too bad.
BudderscotchPudding@reddit
“Once you get past the fact that it looks and it doesn’t look to bad” lol what
jazzgrackle@reddit
lol I mean once you look a little longer and see the ingredients it does look appetizing.
medicated_in_PHL@reddit
What did you use to thicken it? If you did a roux it would have looked a lot better.
scstraus@reddit
Roux is the way.

The second pic showing the thinness really sold it for me.

You need to cook it a lot longer. Medium-high heat and do not cover. Let the liquid cook off and then they will caramelize nicely.
Bigman89VR@reddit
I'd eat it
Business_Curve_7281@reddit
I’ll take it over a steak
welding_guy_from_LI@reddit
