Post is flaired “Opinions Wanted”… what opinion are you looking for?
Sure all that hardware will apparently run your workloads. X58 is an older but mostly modern platform… new computers today basically use the same hardware protocols. Idle power usage and performance per watt will be pretty dated, but doesn’t sound like that’s an issue for you.

I have a project I’ve been neglecting that is sort of like this. It’s a Mac Pro 1,1 that I’m swapping the internals out to a Mac Pro 3,1 which will have two quad core Xeons of the Core 2 65nm era. The 1,1 main board randomly burnt out one day so I’m not throwing it away for no reason.
I have a GTX780 and fully populated the old ram slots with 667mhz ram. The new motherboard will support 800mhz ram but it would seem wasteful to not use the ram I already have.
With the 3,1 main board I should be able to use OpenCore to run just about any OS including the latest MacOS and something as old as Windows XP 64 bit natively.
