Mail Hosting?

Ok so as background:
IM "the IT" for small/medium sized horeca company (200PC full time users 1000 non office workers total AND 3 person IT team)
i only have few years of experience in being anything more than T1 helpdesk explaining advangages of restarting PC
So without further ado....
Cheap Hosting of Emails with servers inside EU, pref Poland?
I currently m hitting 6th TB of Emails
since i cannot find anything higher than 1tb and most offer 300gb max i m
i m currently hitting 9th? diffrent host for mails used at once
becouse of nautre of buisness we own like... 200? diffrent domains that are used
with amount of internal and utility mails Microsoft Outlook and Google offers with per user payment make no finantial sense to choose them
I have decisionmaking power to transfer us or can get budget for investment
and m thinking about better email solution than basing it off multiple vendors
couse only alternative is paying per user to MS or Google and it would bring monlthy cost by unresonable amount

Please point new guard towards right email solution

So are all of those emails unique users? or could they be shared email boxes or aliases?
If so, that cuts your MS365 expenditure way down.
But if you need on prem, that's going to be 'call a consultant' and you'll be spending a LOT more up front, but less long term.

So do you have budget power or not? Your best bets are gonna be O365, if your currently using 9 different hosting providers to get email, the management overhead has to be an absolute nightmare and the user experience must suck.
200 Full Time users (I assume they need the full Office suite?) Get them E1's
1000 Non Office workers (Do they only need Emails?) Get them Exchange Online P1's
200x E1's at 6.61 Euro = $1,322
1000x Exchange Online P1s at 3.42 Euros = $3,420
Total = $4,742 p/m, $56,904 p/y
Running your own mailserver is possible, But are you able to manage HA, Backups, Compliance, DKIM, Spam etc etc if you have only done L1 helpdesk?
It sounds like email's pretty critical to your company, The cost of O365 is letting the pro's do it for you

look into self-hosted solutions like Mailcow or Zimbra on a provider like Hetzner. It takes more setup, but it’s EU-based, cost-effective, and scales better than juggling multiple hosts.

Looks like you may need to host your own mail servers don’t think anyone that I know of offers 6tb of mail storage.
And 200 to 1000 users I would class as medium to large.
